Sausage, Hash Browns and Eggs

  • 2/4 lbs. Pork sausage
  • 2 lbs. Potatoes
  • 6 eggs
  • 1 medium sweet bell pepper

Preheat Dutch oven for about 5-10 minutes while you are preparing the sausage and potatoes.  Cook the sausage and when done remove from the oven.  Cut the sausage into 1⁄2" pieces.  Place the potatoes in the oven.  Fry until done and light brown.  Add the eggs, diced pepper and sausage to the oven.  Mix the ingredients together while the eggs are cooking.  When the eggs are done, serve and enjoy.

Hint:  Use 10-12 briquettes under the oven.  Make sure to leave the sausage grease in the oven so that the potatoes can be cooked.
