Pineapple Au Gratin

  • 3 20-ounce cans pineapple tidbits with juice
  • 12 ounces grated cheddar cheese
  • 2 cups brown sugar
  • 1 cup flour
  • 1 cup coconut
  • 1/2 pound melted butter
  • 3 sleeves Ritz crackers crumbled
  • 1 8-ounce jar candied jalapenos

Heat up a 12" oven with 18 briquettes on top and 8 on the bottom. Spray inside of oven with Pam Butter Flavored. Combine cheese, sugar and flour mix until well blended. Add pineapple, juice and jalapenos mix well. Pour into oven. Put the coconut on top of this and cover with cracker crumbs. Spoon melted butter over the crackers. Bake until bubbly and golden brown (25 to 30 minutes). Add to any flavor of ice cream and it is great.
