Huevos con Chorizo

  • 1 lb. CHORIZO
  • 1 doz. EGGS
  • 8 10-inch FLOUR TORTILLAS
  • 2 cup LONGHORN CHEESE, grated
  • Salt

Fry chorizo in Dutch oven.  Beat eggs lightly in bowl (add a bit of water).  Add eggs to fried chorizo in Dutch oven and cook (stirring regularly).  Invert Dutch oven lid on trivet over coals.  Warm tortillas.  Serve chorizo and eggs wrapped in tortilla with grated cheese.  Salt chorizo and eggs to taste (note: store-bought chorizo is pretty salty to start with).  Serves 6-8.
