Cornmeal Bread

  • 1/3 cup shortening
  • 1 cup flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 cup yellow cornmeal
  • 1 egg
  • 1 cup milk

Preheat oven. Sift flour, sugar, salt and baking powder together. Cut in shortening until you feel no globs of shortening when you rub it between your fingers. Beat the egg and milk together and add it to the dry mixture. Mix until blended. Pour in to a well greased 8 by 8 pan. Place a shallow faced pan face down inside the Dutch oven and out the pan containing the batter on top. Cover oven and place 12 coals on bottom and add 9 coals on top. Bake for 25 minutes or until done.

Charcoal Hints:
Use a 12" deep Dutch oven.
