CAJUN BREAKFAST

  • 2 lb. Sausage
  • 1⁄4 lb. Sliced Canadian bacon (quartered)
  • 1 large Onion
  • 1 medium Bell pepper
  • 1-2 Tbs. Cajun seasoning
  • 1 doz. Eggs (beaten)
  • 1 lb. Grated cheese

Brown sausage adding onion, green pepper and Canadian bacon, Cajun spice.  Cook until done and drain. Add eggs and mix well. Spread grated cheese before serving.
