Breakfast for Eight

  • 2 pounds sausage
  • 2 pound grated potatoes
  • 1 diced onion
  • 8 eggs
  • 2 cups grated cheese
  • 1⁄4 cup milk or water

Brown sausage and onion in a Dutch oven. Remove and brown potatoes in sausage drippings. Add sausage, egg, and milk and bake for 20 minutes until eggs are done. Add cheese and bake until melted.

Charcoal Hints:
Use a 12" Dutch oven with the 3up/3down method during the baking portion of the cooking process.
