Bacon Buscuit Cups

  • 2 (3-ounce) packages of cream cheese
  • 2 tablespoons milk
  • 1 large egg
  • 1 green onion, chopped
  • 1⁄2 cup (2 ounces) shredded Swiss cheese
  • 1 (10-ounce) can refrigerated flaky biscuits
  • 5 bacon slices, cooked and crumbled

Beat together first 3 ingredients until blended. Stir in cheese and green onion. Separate biscuits into 10 portions. Pat each potion into a 5-inch circle and press on bottom and up the sides of greased muffin cups, forming a 1⁄4-inch edge. Sprinkle with half of the bacon and spoon cream cheese mixture evenly on top. Place muffin tin into a deep Dutch oven with a trivet to keep it up off the bottom. Bake at 350 degrees (3up/3down method) for 22 to 25 minutes. Sprinkle with the remaining bacon, lightly pressing into filling. Remove immediately from pan and serve warm. Makes 10 servings.
