Bacon Bits

To help separate the slices, remove bacon from the refrigerator at least 30 minutes before cooking.

If your recipe calls for diced bacon, it's easier to cut when the bacon is semifrozen.

The thinner the bacon, the crispier it becomes after frying.

Start bacon in a cold skillet and cook over medium heat to minimize shrinkage; prick bacon with a fork to reduce curling.
